The Anova Precision Oven 2.0 is the countertop combi-steam oven for cooks who want steam and sous vide without a built-in steam oven. It controls humidity from 0 to 100%, runs sous vide and dry sous vide modes, and adds air fry, proof, dehydrate and steam bake. On paper it has 1.2 cu. ft. (38 L), 12 modes, a 10-cup water tank, a food probe, 1,800 watts and a 482°F maximum. Anova lists it at about $1,299 regular price. It's the most capable countertop oven here, and the most demanding.

Design and build
The Precision Oven 2.0 is about 22.9 inches wide and 51.8 lb, with a stainless and black look (Anova doesn't name the finish). A 10-cup water tank feeds the steam system, so no plumbing is needed. It's big for a countertop, so measure depth and clearance.
Performance on paper: steam, sous vide and humidity
Steam is what sets it apart. Humidity control from 0 to 100% lets you steam vegetables, bake bread with a crisp crust, or reheat leftovers without drying them. Sous vide mode uses high humidity and precise temperature to cook food without a water bath, and dry sous vide cooks unbagged food gently.
The included food probe lets you cook to internal temperature rather than time. Twelve modes include air fry, proof and dehydrate. The 482°F max is modest, so finish steaks in a pan. Dual-band Wi-Fi connects it to the Anova Oven app, though some features require a subscription.
Who it's for (and who should skip it)
Buy it if you're curious about steam and sous vide, want a capable second oven, or have a small kitchen without room for a built-in steam oven.
Skip it if you mainly toast, roast and air fry; a Breville does that for far less. Skip it too if you dislike app subscriptions, or if you're already installing a built-in steam oven.
Price, warranty and service
Anova lists the Precision Oven 2.0 at about $1,299 regular price, and it's sometimes on sale; we can't say when. It carries a 2-year warranty and a 100-day money-back guarantee. Anova calls the warranty "industry-leading 2-year" but doesn't say whether it's full or limited.

How it compares
The Breville Joule Oven Air Fryer Pro is cheaper and app-guided but has no steam. For a built-in steam oven, see the Wolf convection steam oven review at about $6,385. To add sous-vide sealing, look at the Miele vacuum sealing drawer. See our best smart countertop ovens and the countertop appliances hub.
Our verdict
The Anova Precision Oven 2.0 is the most capable countertop oven we cover: 0-100% humidity, sous vide, 1.2 cu. ft. and a probe for about $1,299. It tops out at 482°F and some app features cost extra. Buy it to explore steam cooking on a counter; buy a Breville if you just want a great toaster oven.

Questions about the Anova Precision Oven 2.0
Can the Anova Precision Oven do sous vide without a water bath?
Yes. Its sous vide mode uses high humidity and precise temperature control to cook bagged food without a water bath, and dry sous vide cooks food unbagged. The included probe helps you hit your target internal temperature.
Does the Anova Precision Oven need a water line?
No. It has a 10-cup water tank that supplies the steam system, so it works on any counter with an outlet. You'll refill the tank for longer steam cooks, which is the trade-off for skipping plumbing. Plan for it on long sous-vide sessions.
Does the Anova oven require a subscription?
The oven works without one, but Anova says some app features require a subscription. Its dual-band Wi-Fi connects to the Anova Oven app for remote control and recipes. Check which features are subscription-only before buying if that matters to you.
